Ingredients:
2 tablespoons
butter (or margarine) 2 cups
shredded Cheddar cheese 1 cup
shredded Swiss cheese 2 1/2 cups
milk 3 tablespoons all-purpose flour 1/4 teaspoon salt
1/4 teaspoon
black pepper 2 tablespoons
Dijon mustard 4-6 medium baking potatoes, cut into 1/4 inch slices (about 2 lbs) |

Directions: 1. Preheat oven to 400 degrees. Grease 13 x 9 inch
baking dish. 2. Layer potatoes into dish. Top with cheeses.
3. Melt butter in medium saucepan over medium heat. Stir in
milk, mustard, salt and pepper, bring to boil. Reduce heat and cook,
stirring constantly, until mixture thickens. Pour milk mixture over
cheeses. 4. Cover pan with foil. 5. Bake 30 minutes.
Remove foil and bake 15-20 minutes more, until potatoes are tender and
top is brown. 6. Remove from oven and let stand 10 minutes
before serving.
