 Nut & Raisin Cake

(Raisins are an optional item)

 
Ingredients:

2 sticks                   margarine, softened
1 1/2 sticks            butter, softened
2 1/2 cups              sifted self rising flour
2 1/2 cups              sifted plain flour
3 cups                     sugar
6 large                    eggs
3 1/2 oz                   shredded coconut (small can)
7 oz                          applesauce
5 tablespoons       vanilla extract
4 cups                     pecans, chopped
2 packages           baking raisins (optional)

 
Prep Time:  30 minutes    Cooking Time: 3 1/2 to 4 hours    Serves: 24
Directions:
1.  Cream butter, margarine and sugar
2.  Add eggs, one at a time, mixing well after each
3.  Slowly add flour, alternating with applesauce
4.  Add vanilla extract, mixing well
5.  Pour mixture into large bowl, hand stir in coconut, nuts and raisins, mixing well
6.  Spray 2 bundt cake pans or large thick bottomed 8 quart pot
7.  Bake at 250 degrees for 3 1/2 to 4 hours for bundt pans and 4 1/2 hours for 8-quart pot
