German Cucumber Salad

2     English cucumbers
1     tablespoon kosher salt
1/2  red onion, sliced
1     clove garlic
3/4  cup sour cream
2     tablespoons apple cider vinegar
2     teaspoons fresh dill
1     teaspoons sugar
1     teaspoon black pepper
1.  Line a baking sheet with a tea towel.
2.  Thinly slice the cucumbers and lay on on the prepared baking sheet. Sprinkle with salt.
3.  Let sit 30 minutes at room tempature to allow the cucumbers to release their water.
4.  Pat cucumbers dry and add to a large mixing bowl with the red onion and garlic.
5.  Whisk together the sour cream, vinegar, dill, sugar,and pepper in a small bowl.
6.  Pour the dressing mixture over the cucumbers and toss to coat.
7.  Serve immediately.
White Wine: Reisling or Savaignon Blanc
