 Coconut Rich Pie


Use ready deep dish pie crust

1/4 cup                  butter, softened
1 tablespoons     Self Rising flour
2                              eggs, beaten
1  cup                     sugar
1/2  cup                 half-and-half or light cream
1/4  teaspoon      almond extact
2  cups                  finely grated coconut (frozen food dept)
1                             unbaked 9-inch deep dish pie shell
Prep Time: 5 minutes    Cooking Time:45 minutes    Serves: 8
1.  preheat oven to 350 degrees
2.  mix butter and sugar together well using a whisk, whip in eggs one at a time
3.  add flour, milk and almond extract
4.  blend until smooth, stir in coconut
5.  pour into unbaked pie shell
6.  bake 45 minutes
